Sunday Waffles: Gluten Free and Yeast Free
I adapted this recipe from the one on the back of the Ener-G Rice Mix box, and it is one of the easiest "alternative" waffle recipes I have found!
2 eggs, beaten
1/2 cup oil (I use olive oil)
1 cup milk (I use whole milk)
1 tsp. baking soda
1-1 1/2 cups Ener-G Rice Mix
I've also sprinkled cinnamon and nutmeg in the batter for variety.
Mix all ingredients and pour batter into hot waffle iron.
For waffle toppings, I cut up fresh berries (blueberries, strawberries, and/or blackberries), cook them in a small pan over medium/medium low heat until the fruit breaks down and becomes similar in consistency to jelly.
One night I also used this basic recipe for garlic toast. I sautéed fresh garlic in a little oil before adding it to the batter, added a dash of oregano, and cooked it in the waffle iron.
